We love granola in our house, we (I) eat it by the bowlfuls. I top it on yogurt or eat it right out of the bag as an afternoon snack. This recipe made a lot and it has very few ingredients. I thought the mister would enjoy that it had cocoa in it. He is a chocoholic after all.

8 cups quick cooking oats (I mixed half quick cooking and half regular, I actually prefer regular oats)
1 cup sliced, toasted almonds
2 cups unsweetened coconut
1/2 cup butter
3/4 cup maple syrup (use pure, if you can)
1/4 cup unsweetened cocoa (heaping)
1/2 Tbsp vanilla extract
Preheat oven to 250 degrees.
In a large bowl, combine oats, almonds, coconut. Set aside. In a small liquid measuring cup melt butter in microwave, add cocoa and maple syrup. Microwave for another 30 seconds or until there are no more lumps. stir, add vanilla. Pour mixture over bowl of oats and stir well to make sure it's all coated. Divide between 2 cooking sheets, bake for 1 hour, stirring occasionally. Cool and store in airtight container.
