Frittata and homefries

I have a confession. I have never made an omelet. I am sceeeerd of them. Weird, I know. It's the whole circling of the pan and flipping over. I get all nervous, what if it sticks? what if its not done? I let the mister make the omelets. He can make a greek omelet that will make you wanna smack your granny. You wouldn't do that of course. Cause you love her. Anyway frittatas are more up my alley. And what a wonderful summer dinner they make. Like an omelet you can throw anything in that appeals to you.

Recipe by Giada De Laurentiis

6 whole eggs
2 Tbsp whipping cream
1/2 tsp salt
1/4 tsp pepper
1 Tbsp olive oil
1 Tbsp butter
12 ounces asparagus, trimmed and cut into 1/2 inch pieces
1 tomato, seeded and diced
salt
3 ounces fontina, diced

Preheat broiler
Whisk the eggs, cream 1/2 tsp salt and pepper in a medium bowl to blend, heat oil and butter in a 9 1/2 inch diameter nonstick ovenproof pan. Add the asparagus and saute until crisp tender, about 2 minutes. Raise the heat to medium high, add tomato and pinch of salt and saute 2 minutes longer. Pour the egg mixture over the asparagus and cook for a few minutes until the eggs start to set. Sprinkle in the cheese. Reduce heat to medium low and cook until almost set but top is still runny about 2 minutes. Place pan under the broiler and broil until the top is set and golden brown about 5 minutes. Let frittata stand about 2 minutes. Remove from pan, slide onto plate and cut into wedges. Serve with home fries.

Home Fries

Recipe by Smitten Kitchen

1 1/2 pounds yukon gold potatoes, scrubbed and cut into 1/2 inch cubes
4 Tbsp unsalted butter
1 onion, diced
salt and pepper to taste
optional seasonings to taste
(garlic power, season salt, paprika, chives)

Arrange the potatoes in a microwave safe bowl and top with 1 Tbsp butter. Cover tightly with plastic wrap and microwave until the edges of the potatoes begin to soften about 5-7 minutes. Shake bowl to redistribute potatoes halfway through cooking.

Meanwhile heat 1 Tbsp of butter in a large nonstick skillet over medium heat, add onion and cook until softened and golden brown. Remove onion to a bowl.

Melt remaining 2 Tbsp of butter in same skillet, add potatoes and pat down with spatula. Cook without stirring, until underside of potatoes are brown and crisp, about 5-7 minutes. Reduce heat to medium low and continue cooking and stirring potatoes until all sides are golden brown and crisp, about 9-12 minutes. Add in onion and salt and pepper and seasonings to taste.







Peach Cobbler

This is one of those easy peasy recipes. Super fast, super easy (my 10 year old son made this) and super yummy. You can use any fruit you like in this recipe. My favorite is fresh blueberries but this one is made with canned peaches. Trust me. Deliciousness.

1 stick butter
1 cup sugar
3/4 cup self rising flour
3/4 cup milk
1 28 ounce can peaches in syrup
dash of cinnamon

Preheat oven to 350 degrees. Place butter into a 2 qrt dish and place in oven until melted. In a separate bowl, mix the flour and sugar together, slowly add milk, stir until well combined. Pour batter over the melted butter do not stir. Spoon fruit evenly over the batter making sure not to mix or stir, add syrup. (optional) Sprinkle a dash of cinnamon on top. Bake for 30-45 minutes until golden brown. Serve warm with vanilla ice cream or fresh whipped cream.

Oh memorial weekend how I love thee. Summer is right around the bend. If you squint you can see it. I hope your doing something fun, even if it's sittin on your bum with a cold drink in hand, if it makes you happy that's all that matters. Enjoy life. Eat ice cream. Ice cream makes everyone happy.
 I love this time of year when I can bring the beauty of outside in. Everything looks purty in a mason jar.

Peanut Butter Cookies

A classic treat. One of my favorites. I have a strong opinion about peanut butter cookies, it's just my opinion, it's just a cookie, but it's important to me so I'll share :) Peanut butter cookies should have shortening....It's a must...for me. It can have shortening and butter or just shortening but it must be in there. Do I eat shortening everyday? of course not but it does make the best peanut butter cookies. Also, you can't make peanut butter cookies with natural peanut butter. Well, you can, they just won't taste very good.I love natural peanut butter we eat it in our house daily. But when I make cookies I buy good ole' Skippy, or Peter Pan. And last is, a classic peanut butter cookie should have a criss cross fork mark on it. I firmly believe it makes the cookie. I do not roll mine in sugar, I just don't. Excuse me while I climb down from my high horse and share the recipe. Good Day.

Recipe by King Arthur Flour

1/3 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp vanilla
3/4 cup peanut butter
1 1/2 cup all purpose flour
1 tsp baking soda
1/2 tsp salt

Preheat oven to 350 degrees

In a bowl using a mixer beat the shortening, peanut butter and the sugars until light and fluffy. Ad the egg and vanilla and mix well. In a separate bowl sift the flour, baking soda and salt. Slowly add dry ingredients to wet and mix until incorporated. Drop by Tablespoonfuls onto a prepared cookie sheet, flatten slightly with palm of your hand and use a fork to lightly press a criss cross patter onto cookies. Bake for 12-16 minutes. Let cool on cookie sheet.




Monday Musings

1. Forgive me for being absent so long. I do not know what happened. I have no real explanation. I haven't baked, I haven't picked up my camera (except my phone because it is attached to me with super glue, a habit I am working on.) I think I was in a funk, and my house is out of control and I am not in control and everything is a mess and not in it's place and covered in white drywall dust funk. I wanted to move, I wanted to stay in a pretty hotel on the coast sipping margaritas watching the sun set, and wait for the call..."Your bathroom is finished, oh and we cleaned your house too!" that was not an option. So I hid in the funk. Friends kept saying "Your so patient!" The true fact is I was exploding on the inside, My husband would tell you I was irritable, irrational and cranky. I have learned alot about myself :) Anyway, I am back and I have missed you! I hope to have some before and after picks of the bathroom up soon.

2. I am going through Downton Abby withdraws, I am afraid I am going to lose my British accent during this hiatus.
