1 cup butter, room temperature
1 1/4 cup sugar
2 tsp pure vanilla extract
1 tsp almond extract
1 whole egg
2 1/4 cups flour
1/4 cup cornstarch
3/4 tsp baking soda
1/2 tsp salt
1/2 cup rainbow jimmie sprinkles
2 Tbsp nonpareil sprinkles
Preheat oven to 375 degrees In a bowl cream the butter and sugar until light and fluffy about 2 minutes. Add vanilla and almond extracts and the egg. Mix until well combined. In a separate bowl sift the flour, baking soda, cornstarch and salt. Slowly add to the butter mixture, mix until just combined. Mix in the sprinkles. Be careful not to over mix. Using an ice cream scoop, scoop dough onto prepared cookie sheets spacing about 1 1/2 inches apart. Bake for 12-15 minutes until they just start to turn slightly brown. Cool on a wire rack.
