Lemon Loaf

Oh how I adore citrus. Especially in these warmer months. So refreshing.

Recipe by Forgiving Martha

3/4 cup sugar
1/4 cup softened butter
1 large egg, room temperature
2 Tbsp plain or lemon flavored yogurt
1/2 cup milk
1 1/2 cup all purpose flour
1 tsp baking powder
zest from one large lemon

For Glaze

juice from 1 large lemon
1/4 cup powdered sugar (or more until desired consistency is reached)

Preheat oven to 350 degrees. Butter and flour an 8X4 inch loaf pan. Set aside.

In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add egg and yogurt and mix to combine. Beat in the milk. In a separate bowl sift the flour and baking powder, add to egg mixture and stir until blended. Add lemon zest, mix until combined.

Pour into prepared pan, bake for 1 hour or until top is golden and a toothpick inserted into center comes out clean. Let cool in pan for 5 minutes. Then remove to a cooling rack.

To prepare glaze whisk together the lemon juice and sugar until desired consistency (you want to be able to pour). While the cake in on a plate, pour glaze over warm cake. Cool completely before cutting.
