I have been eating A LOT of brussel sprouts lately. Costco sells a large bag of fresh brussels and we have been eating them at least once a week for over a month. I adore them. And anyone who says they hate them I want to snatch you up and serve you these roasted brussels. Actually, this is how I prepare all of my vegetables. This is how I have gotten my kids to eat vegetables...or at least try them. Roasting vegetables brings out the natural sugars and the high temps actually causes them to, shall I say, caramelize? This is the most basic. Try them this way first, then if you like them, add bacon, or a little bit of balsamic reduction....ridiculous I tell you. Roast your vegetables my friends, it's life changing!
Brussels, trimmed and outer leaves removed. If they are large I cut them in half
extra virgin olive oil
kosher salt
fresh ground pepper
Preheat oven to 425 degrees.
Drizzle your trimmed brussels with EVOO and salt and pepper, toss with hands to evenly coat. Roast in oven for about 20-25 minutes. They will start to get brown around the edges. Don't panic, that's what you want..that's the good stuff.
Enjoy.
Use this same process for any vegetables.

InstaFriday
Things are finally getting back to normal around here. No sickness, no meds, everyone is sleeping through the night now. It has felt like spring outside this week. No complaints. Here's a glimpse. Happy Friday!!
Came home Saturday afternoon to Driving Miss Daisy. I love this movie and could watch it over and over.
Daddy and Jake were gone all day and night Saturday, so we made milkshakes....for dinner. can you say Mom of the Year?
You tube is teaching my kids how to draw. For 4 hours they sat there are drew. hooray for you tube.
looks like you missed the paper there bud, or did you tube teach you that too. I asked him to make a silly face for this shot....yeah we need to work on that.
Still working on a weight loss program for Abby. She hates dieting, I don't blame her.
self explanatory. It was Tuesday. It deserved a beer.
yesterday it was almost 70 degrees I enjoyed every minute of it.
Ruby decided to join in on the fun and take my straw
Leon was soaking up the rays as well. Can you say Spring Fever?

Pocket Pies
A few years ago I just had to have the adorable little pocket pie makers from Williams-Sonoma and honestly they've been doing a wonderful job collecting dust in my cabinet. I decided to dust them off yesterday and make some pocket pies. Both of these recipes are from Williams-Sonoma . Both were delicious, I liked the apple cranberry the best. I used dried cranberries instead of fresh. You do not need pocket pie makers for this recipe, you could use a biscuit cutter or a drinking glass and use a fork to crimp your edges.
Apple-Cranberry Pocket Pies
For the crust
2 1/2 cups all-purpose flour
1 tsp salt
2 Tbsp granulated sugar
2 sticks cold unsalted butter cut into 1/2 inch dice (I dice my butter first and put in the freezer to get really cold while I prepare the flour mixture)
6-8 Tbsp ice water
For the filling
1 1/2 lb pink lady or McIntosh apples (I would not use McIntosh they typically fall apart) any yummy firm apple will do, I used gala. a mix of apples would be yummy too. Peeled, cored and cut into 1/2 inch dice
1/3 cup firmly packed light brown sugar
1 tsp pure vanilla extract
1/2 tsp cinnamon
1/8 tsp salt
1/8 tsp fresh grated nutmeg
2 tsp cornstarch
2 Tbsp unsalted butter
1 1/2 tsp fresh lemon juice
5 oz fresh cranberries (I used dried)
1/4 cup granulated sugar
2 Tbsp water
1 egg, lightly beaten with 1 tsp water
granulated sugar for sprinkling
Directions
In the bowl of an electric mixer fitted with the paddle attachment beat together the flour, salt and the 2 Tbsp granulated sugar on low speed until combined, about 10 seconds. Add the butter and beat for 30 seconds, then increase the speed to medium-low and beat until the mixture resembles course meal, about 1 1/2 minutes more. Add the 6 Tbsp ice water, reduce speed to low and beat for 20 seconds. The dough should hold together when squeezed with your fingers but should not be sticky. If it is crumbly, add more water 1 tsp at a time, beating for 5 seconds after each addition. Turn the dough onto a work surface. Divide the dough in half, wrap with plastic wrap and shape each into a disk. Refrigerate for at least 2 hours or up to overnight.
To make the filing, in a large bowl stir together the apples, brown sugar, vanilla, cinnamon, salt, nutmeg, and cornstarch. In a large saucepan over medium heat, melt the butter. Add the apple mixture, cover and cook, stirring occasionally, until the apples are just tender but not mushy, 16 to 18 minutes. Remove from the heat, stir in the lemon juice and dried cranberries let cool for 30 minutes.
Let the dough stand at room temperature for 5 minutes. On a floured surface roll out 1 disk into about 3/16 inch think. Brush off excess flour cut out 8 shapes (4 tops 4 bottoms). rerolling dough if necessary. Repeat with remaining disk. Place 2 tbsp of filling into half your shapes and brush edges with egg wash then place your tops on. Crimp edges with a fork. (if you are not using a mold, you need to cut a small hole or a slit into your pie top so steam can release and your pie won't explode.) Freeze pies for 30 minutes.
Preheat oven to 400 degrees.
Brush the tops of pies with egg wash and sprinkle with granulated sugar. Bake until the crust is golden brown and the filling in gently bubbling, 22-24 minutes. Transfer the pies to a wire rack and let cool for 10 minutes.
Cherry Pocket Pie
Do everything exactly the same as above for these except the filling is different, here is the recipe. (I used frozen hulled cherries) rinsed and thawed, they worked perfectly.
2 cups fresh or frozen pitted sour cherries, thawed and drained if frozen.
1 tsp pure vanilla extract
1/2 cup sugar
1 1/2 Tbsp cornstarch
pinch of salt
1 egg, lightly beaten with 1 tsp water
Coarse sugar for sprinkling.
In a saucepan, whisk together the 1/2 cup sugar, the cornstarch and pinch of salt, then add cherries and vanilla. Set over medium-high heat and cook until slightly thickened, about 15 minutes. Let filling cool.

Monday Musings
1. Today, right at this moment is the first time in 11 days I have been alone in my house. Emerson has returned to school not very willingly. I went for a run. I had a cup of coffee I am breathing in the silence.
2. I have made this Brown Sugar and Balsamic Glazed Pork twice in two weeks...it is so delicious.
3. Somebody please give her a double cheeseburger...with bacon.
I DO NOT GET IT......
4. Currently drooling over this home... The Lettered Cottage I love everything about it.
5. Am I the only one that gets overwhelmed in Trader Joes? Seriously. I can get through Costco with everything I need in under 20 minutes...blindfolded. But I walk into a Trader Joes and my palms start to sweat, my heart beats faster, my eyes cannot focus. Do they offer Trader Joes tours? They should.

Tres Leche Cake
There are no words to describe how much I love this cake. We all have now claimed it as our "birthday cake." We do this every time we come across a dessert that just blows our minds and we claim it as what we want for our birthday. THIS IS birthday cake worthy. This is everyday I want this cake and last meal worthy cake. Dear Lord.
Recipe by Pioneer Woman
1 cup all purpose flour
1 1/2 tsp baking powder
1 tsp salt
5 whole eggs, divided
1 cup sugar, divided
1 tsp pure vanilla extract
1/3 cup whole milk
1 can evaporated milk
1 can sweetened condensed milk
1/4 cup heavy cream
For the icing
1 pint heavy cream
1/4 cup powdered sugar (sifted)
Preheat oven to 350 degrees. Spray a 9X13 inch pan liberally until coated.
Combine flour, baking powder, and salt in a large bowl. Separate eggs.
Beat egg yolks with 3/4 cup sugar on high speed until yolks are pale yellow. Stir in milk and vanilla. Pour egg yolk mixture over the flour mixture and stir very gently until combined.
Beat egg whites on high speed until soft peaks form. With the mixer on, pour in remaining 1/4 cup sugar and beat until egg whites are stiff but not dry.
Fold egg white mixture into the batter very gently until just combined. Pour into prepared pan and spread to even out the surface.
Bake for 35 to 45 minutes or until a toothpick comes out clean. Turn cake out onto a rimmed platter and allow to cool.
Combine condensed milk, evaporated milk, and heavy cream in a small pitcher. When cake is cool, pierce the surface with a fork several times. Slowly drizzle all but about 1 cup of the milk mixture trying to get as much around the edges of the cake as you can.
Allow the cake to absorb the milk mixture for 30 minutes. To ice the cake, whip 1 pint heavy cream with 1/4 cup sifted powdered sugar, until thick and spreadable. Spread over the surface of the cake. Decorate cake with whole maraschino cherries. Cut into squares and serve.

A gift....from my brother. I'm obsessed.
Words I repeated to myself many times this week.
We had so much rain this week, I had to capture the beautiful sun when she finally showed herself.
